Today I am sharing my own EASY Tiramisu recipe with you lucky folk, where you do not need to use a double boiler and the result is delicious and fool-proof.
2 x Packets of Finger Biscuits
2 x shots Amarula (optional – could also change to Rum / Marsala / Bailey’s)
2 Cups of Strong Italian Filter coffee
3 x very fresh eggs
500g Mascarpone Cheese
2 T Castor Sugar
1 T Treacle Sugar
Tiny capful of Vanilla Essence
Pinch of Salt
First separate the egg whites from the yolks into separate bowls.
Stir the castor sugar and vanilla essence in with the egg yolks and whisk until yellow and fluffy. Start adding the mascarpone bit by bit and blend in well until creamy and smooth. Then add a pinch of salt to the egg whites and whisk until hard (put your back into it). Blend this into the cheese mixture gently until well mixed. You want the cheese mix to be nice and thick.
Add two shots of Amarula Cream and treacle sugar (or normal brown sugar) to the hot coffee and stir well. Dip the finger biscuits into the coffee for a second on each end and then layer them on the bottom of a large square dish. Cover this first base layer with half of the mascarpone mix and even out. Add another layer of the dipped biscuits on top of this, and finish off by coverering with the balance of the mascarpone mix. Dust with cocoa powder over the top and cover with cling wrap, this dessert needs to chill in the fridge for 4 hours before serving.

Appearance: 7/10 (simple yumminess)
Taste: 7/10 – a rich, satisfying traditional dessert with coffee and hints of liqueur
